I am curious if there any battles which I could read up on which have significant battles between forces armed with conventional bows and crossbows?

I'm still looking, but have not found any specific battles regarding your request. I will continue looking, maybe somebody will come up with something before I do.

Agincourt and Crecy (England VS France, Late Middle Ages) saw English archers and French crossbowmen on both sides, but their presence is by far not the most important factor for victory.
